Three Cheese Macaroni Pie

Macaroni Pie.
If you love Pasta , Cheese and Casseroles as much as I do….you’re gonna love this pie.
It has many aliases ??Mac n’ Cheese Pie, Baked Pasta Pie, Pasta Casserole, Pasticcio, Macaroni Pie and it’s known by the latter in Scotland and in the Caribbean.

Now when I think of the term Macaroni, I think of Yankee Doodle..
You know the tune…sing it with me ??
Yankee Doodle went to town
A-riding on a pony,
Stuck a feather in his cap
And called it Macaroni.
Yankee Doodle was a wartime melody sung by British soldiers and what I found particularly interesting was their use of the term “Macaroni”.
Now the song had some name calling and the word “Macaroni” was supposedly meant to insult the Yanks…but that’s a whole different blog post for a different time.
I do think I can say with certainty, Yankee Doodle liked him some Macaroni Pie….and I can’t blame a fella for liking his food!
Who doesn’t like cheesy, carby goodness?!
The British also made their way to the Caribbean during colonization and I reckon they brought their love of Macaroni Pie with them.
A little tweak here and there, minus a crust (the Scottish version) and the Caribbean Macaroni Pie was born. 
The version that I made is inspired by the Trinidad Macaroni Pie.
Wildly popular for lunch and Sunday meals, often served with some sort of meat stew and smothered in gravy it’s a favourite on the islands.

An easy macaroni pie that’s very satisfying, it can be eaten hot or cold and…
It can also be eaten while singing Yankee Doodle (though I wouldn’t recommend eating and singing simultaneously).

Three Cheese Macaroni Pie Recipe

You will Need:

• 675 g Bucatini
• 3 eggs (medium)
• 3 tbsp Butter
• 3/4 cup Whole Milk
• 1 Garlic Clove (crushed/minced)
• 1 1/2 tsp Mustard Powder
• 1 1/2 tbsp freshly cracked Black Pepper
• 2 tsp Sea Salt

• 280 g Cheddar (old/aged)
• 340 g Mozzarella
• 122 g Grated Parmesan

Method:

1. Preheat the oven to 350°F.
2.  Boil the Bucatini in some salted water till al dente. Follow the cooking time instructions on package.
3. Grate the Cheese and set aside.
4. Measure out the Milk, add the Eggs, Mustard Powder, Garlic, Salt, Black Pepper and whisk to combine. 
Ensure the eggs are fully incorporated.
5. Strain the pasta, add to a big bowl and immediately add the butter. Mix to incorporate.
6. Add 3/4 of the grated 3 cheese mixture. Add the milk mixture and toss to incorporate.
7. Pour the pasta into a lightly buttered 4quart casserole dish.
8. Top with the remaining cheese.
9. Bake at 350°F for 40-45 mins. or until the top is golden.
Tips
?️To create an extra golden crispy crust, raise the temp to 435° in the last 5 mins. of baking.
?️Parmesan is an excellent cheese for adding extra flavour, it also helps create a lovely crust.
